Pokemon scarlet and violet. Based on your top games, I’d think it would fit since it is also open world! Plus, it can be really immersive if you take pics through your journey and walk around with your mons on occasion instead of riding your mount everywhere

Xenoblade and Witcher 3 perhaps? both of them are really good and the Witcher’s performance on the Switch supposedly really holds up

Since you’ve enjoyed Spiritfarer maybe Wylde Flowers (it’s farming sim-esque but much more emphasis on narrative and characters and much less on farming).
My mum bought me faefarm for my last bday and it’s like a mix of acnh and stardew valley – would definitely recommend for a rainy day 🥰
